Healthy Vegan - Surprise Vegan Eats

The prompt today gave me the chuckles 'Share something vegan (and delicious, duh) with a non-vegan'.  Well I am the non-vegan here participating in Vegan Mofo and everything I have been making this month has been vegan and pretty delicious.  But I haven't kept it all to myself.  I have been very generous with my kitchen experiments taking some of my edible creations to family and some into work and sharing with friends and colleagues, some are vegetarian, but most are omnivores.  
Here are some dishes that I have recently shared with non-vegans and non-vegetarians in my life. First up is an Ethiopian and Ertirean inspired Zigni Broth based on the more familiar D'ba Zigni.  This one has sweet potatoes and spinach. It was the first time some of them had tried an Ethiopian and Eritrean food and like me were surprised at how spicy it was.  
Next we have a vegetarian chilli.  You can't go wrong with a vegetarian chilli with family and friends, and then go and shock them further by telling them its vegan too.  I created this Chocolate Beetroot Chilli one not long ago and everyone who had a bowl full raved about not just how stunning it looked, but how fabulous it tasted too.  



Now we have these Paprika Mushroom pies, I did take one of these pies into work and it was demolished in less than half an hour; and the other went to family - all of whom are omnivores, again demolished - all that was left was crumbs.  

Its not just savoury food that I share with people in life who are either not vegetarian or vegan. Quite recently I shared some sweet bakes and sweet eats too.


For a start, I fooled my nephews and nieces with these Welsh Cakes and then told them these were vegan, they seriously could not tell the difference. 
I made these Beetroot Coconut 'Bounty' Bars last year and never got to share them with my mother, who just adores Bounty Bars.  Well I got a chance to make her some a little while back and she LOVED them, she was none the wiser that they were vegan.  
I made some vegan Coconut Creme Brulee and my husband who is vegetarian by association, enjoyed it and was most surprised when I told him it was completely vegan.  
A couple of months back, I made these Lemon Bars, bookmarked from Veganomicon and Vegan Cookies Invade Your Cookie Jar.  My husband polished off most of them, but I did manage to steal some away from him to share with colleagues at work, who were totally amazed that these were vegan.  I told them, 'you can pretty much veganize anything, just wait for the vegan macarons and vegan meringues'. And they are waiting...rather patiently too. 
But before that, they got another vegan cake, a vegan 'Cheesecake' to be more precise.  This recipe for Green and Black  Cheesecake with Bengali Lime and Avocado came courtesy of Ms Marmite Lover aka Kerstin Rodgers via her cookbook V is for Vegan.  I got them further astounded, excited and amazed, a colleague declared me as 'genius', I responded I wish, the recipe like the Lemon Bars above come from a cookbook, not my head.  They are still stunned that I can create and re-recreate something like this at home and then share it with them.  You know what makes me smile, the knowledge that noone is going to fall out with me in a hurry.
