Healthy Vegan - Proper Red Apples and Flavourful Tomatoes

The same neighbour that gave us some cherries a little while back, knocked on our door and handed us over a bag of the reddest apples I have ever seen in my life.  He is growing them for home brewing -  cider production.  They are good eaters and I have been taking some into work to munch on, but I will do some baking with them too.     We repayed the compliment, this time not with plums but with a mixed bag of tomatoes.  The tomatoes have certainly been rewarding us this year.  As well as tomatoes, I harvested the last of the runner beans and purple beans.   Sadly I don't think I will be getting any Rainbow Swiss chard from the garden, but I did get a handful of black Tuscan kale.   Some Cherry tomatoes had fallen to the ground in the greenhouse, D brought them in and placed them in the windowsill to ripen.  And finally these are the last of the plums.   Here is a Cinnamon Plum and Almond Galette that I made. ...

Healthy Vegan - Courgettes, Blueberries, Nasturtium and Leafy Greens

Its been over a month since I last participated in Harvest Monday.   Last month I shared strawberries from the garden , today its misshapen courgettes: green and yellow. And there is plenty more where they came from..... Ready to harvest the first beetroot from the garden.   It looks like its going to be a beauty. Lots of salad greens including Lollo Rosso We've also been tucking into our nasturtium leaves and the edible flowers.  I recently made some savoury Turmeric pancakes .  I have a number of other recipes in mind too, so watch this space if your looking for ideas and inspiration.  We are still waiting to pick my first lost of runner beans, though our neighbours have been picking them for over two weeks.  Blueberries have been fantastic this year, last year I only got a handful.  This year, around 500grams and there is more to pick.     I have had to net the blueberry bush as a cheeky Thrust was diving int...

Healthy Vegan - Small Harvest for Bank Holiday Monday

I have very little to share with Harvest Monday, but whatever I have harvested I am thoroughly enjoying and I am pleased enough with them to share with you.   First of the cherry tomatoes from the greenhouse.   They did go in very late, but we will have some homegrown tomatoes to enjoy.   Picked a handful of runner beans that have been enjoyed as a side dish. The courgettes are still coming along, and we have been enjoying them almost every day this week in dishes such as Courgetti Pasta, Courgette Cauliflower Couscous     South Asian style Ratatouille ,    Yellow Courgette Orzo Pasta     Courgette Dal Soup ,   Yellow  Courgette Stew  Some of you may remember that I mentioned that D had stuck some courgettes in the greenhouse.  Well these are those courgettes, overgrown and producing mostly flowers.  He won't be doing that again. Healthy Vegan - Mostly Plum Harvest Monday

A bit like the last time I participated in Harvest Monday I don't have much to share in the way of fresh produce, but what I have harvested I have either eaten or preserved for the months to come.  I have picked more than this one yellow cherry tomato, a good bowl full in fact (sadly not pictured) - but I like this picture that I just had to share it.  Still picking some salad greens from the greenhouse and edible flowers from the garden plot.  The courgettes are beginning to dwindle now.  I made this Stuffed Fantail Courgette  stuffed with vegetarian mince. We came back from our holidays on Saturday and a load of plums were on the ground, bruised, battered that the only place for them was the bin.  Such a shame really, still we have some still hanging on and this means we still have more plum recipes to share, but here are a handful that have made an appearance on my blog already, just in case you've missed it. Healthy Vegan - Dwindling Harvest

The fruit and vegetables in my garden plot are beginning to dwindle I share some golden and red cherry tomatoes from the greenhouse.  The lettuce has either bolted or the slugs have got to them.  A handful of runner beans.  We didn't plant that many, but we have have enjoyed them mostly steamed over the past month. Although I have some beetroot growing in my garden, a friend of a good friend handed me a brown paper bag that contained some beetroot from her allotment plot.  I thought it would be rude not to accept as it was a gift to welcome the start of a new working relationship.  I made this Beetroot Chutney.  I will share the recipe later in the week.  In the paper brown bag, there were also a couple of allotment grown carrots.  D was a little jealous of the soil covered carrots as we didn't grow any this year, next year we hope we will. Healthy Vegan - Red Rose Petals and Strawberries

I mentioned in my last Harvest Monday blog post that the weather in the UK is glorious.  It truly has been weather of Mediterranean climes, but some of the plants have not appreciated it.   First my lovely red roses are scorched and dry from the blazing heat, and those rose that were still clinging on are now fallen petals. The strawberries started off very well and looked promising, but have stopped fruiting - unless of course the birds have got to them all.  Last year the strawberry plants yielded lots, this year maybe enough to fill four small punnets.   A small bowl of homegrown strawberries that was made into Strawberry Crisp Crumble. A good harvest of wild strawberries.   Some raspberries growing in the garden, but like the strawberries I don't think its going to be as good as previous years harvests.  A handful of raspberries.   I have also harvested some rhubarb (not pictured) which was promptly transformed into a cr...
